Chicken and Cheesy Potatoes

I recently found a recipe online for Cheesy Bacon and Ranch Potatoes, a side dish. I thought, "why not add chicken and make it a total meal!" So I did and this is the results of my Chicken and Cheesy Potatoes which my family loved. I have a few picky eaters so I was overly excited when everyone liked it. Being cooked in a slow cooker made this meal extra easy, just add the ingredients and walk away until dinner time. The final image may look a bit bland but I can attest to the fact that it was full of flavor.

Ingredients:

  • 2 lbs  potatoes peeled and chopped into quarters
  • 2 cups shredded cheese (I used a Mexican blend)
  • 8 slices cooked bacon crumbled 
  • 2 tablespoons dry ranch dressing salad dressing mix
  • salt and pepper to taste
  • 1 tablespoon of onion powder
  • 3-4 frozen chicken breasts
  • Spray cooking oil

Directions:

Spray the inside of your Slow Cooker with Cooking Oil.

Begin by washing and peeling the potatoes
place them in the bottom of the Slow Cooker.

This is one of my favorite kitchen tools, my KitchenIQ potato peeler with a knife.

layer all the ingredients in the slow cooker
cook on high for 4 hours
or low for 6-8 hours

You can shred the chicken to make it easier to serve if you desire
