Chocolate Cream Cheese Cupcakes

The first time I had these cupcakes, I fell in love with them. But not with the amount of time it took to make them from scratch. So, I found a way to shorten the time by incorporating a cake mix for many of the ingredients. It  takes no time at all now. These are an easy dessert to make since they don't need any frosting.

Ingredients:

  • Chocolate or Fudge flavored cake mix
  • 8 oz cream cheese
  • 1 egg
  • 1/4 sugar
  • 6 oz chocolate chips

Directions:

Follow the instructions on the cake mix. In another bowl, mix together the cream cheese, egg and sugar. Once blended, add the chocolate chips.

Line a cupcake pan with paper liners. Fill 1/2 to 3/4 full of the cake mix. Add into the middle of each cupcake a generous tablespoon full of the cream cheese mix.

Follow the cake mix baking instructions which are typically; heat oven to 350 degrees and bake for 15-17 minutes for cupcakes.

This recipe makes approximately 24 cupcakes.
