Virtual Christmas Cookie Exchange 2018

Lace Cookies

These cookies speak Christmas to me. I remember every year, my mom would buy a variety of cookies from the bakery. There would be a white box in our dining room and thankfully, they weren't being saved for a special occasion. I remember the Lace Cookies being one of my favorites. Little did I know they were so easy to make. 

Ingredients:

  • 2 tablespoons butter
  • ¼ cup granulated sugar
  • ¼ cup light brown sugar
  • ¼ cup light corn syrup
  • pinch of salt
  • ¼ cup all-purpose flour
  • ½ cup finely chopped almonds
  • ½ semi-sweet chocolate bar (Bakers)
  • cream - 2.5Tbsp or so

Directions:

Start by heating the to oven to 375° F.

 


In a medium saucepan, heat the butter, sugars, corn syrup, and salt over medium-low heat, stirring occasionally.

 


Wait until smooth. I let mine come to a slight boil.
 

 


Remove from heat and mix in the flour and almonds just until incorporated.

 


I spray my foil lightly with cooking spray.
Then drop about half a teaspoon of the batter onto foil covered baking sheets, spacing them 4 inches apart. Bake until golden brown, 6 to 8 minutes
You may find that you need to use less time as the batches progress. I started at 6 minutes and finished around 5 minutes a batch.

 


They really flatten out and have a mind of their own for the shape.
I remove the foil with the cookies and set it aside to cool.
I then use another sheet of foil and being the process again until the mixture is gone.

 


In a microwave safe bowl place half the Bakers chocolate and a tablespoon of cream.
Microwave for 15 seconds. Stir. (picture above - not much melting yet)
Back to the Microwave for another 15 seconds, add another tablespoon of cream. Mix well.
Microwave again for another 10 seconds, add 1/2 tablespoon of cream and mix throughly.

Place into a plastic sandwich bag and cut a very small piece of the corner so you can drizzle the chocolate onto the cookies.

 


They are so pretty and delecate looking. Everyone will think they were difficult to make.
