Chicken Bake

I received the recipe from a friend. It was served at a luncheon, fashion show and auction event for our local food pantry. The chicken was a hit, with lots of compliments, so I asked for the recipe. The following is what was shared with me.

Preheat oven to 350. Take 4 lbs. chicken breast Combine 1/2 cup sour cream and 1 can of cream of mushroom soup.  Pour the mixture over the chicken.  Then mix together 1 Tablespoon of poppy seeds, 1/2 cup melted butter and 1 1/2 cups ritz crackers (crushed) and spread over the chicken.  Bake 25-30 min. until chicken is done.

I followed the directions but instead of full chicken breasts, I cut them up into large bite size pieces. I exchanged cream of chicken soup for the cream of mushroom soup. I also added a tablespoon of garlic powder to the cracker topping. I baked mine for an hour since my chicken was still a bit frozen in parts. My version also got rave reviews. I served it along side of white rice. 

This recipe is definitely a keeper and one I will rely upon again. Obviously, you can make adjustments to this recipe and you barely need to measure out ingredients to get a great dish.
